MOTHER'S DAY MENU

For 2 people.

Cold soup - parsley & celeriac - garnish with asparagus, fiddleheads and fermented vegetables

Puff pastry brioche with spinach and cheddar cheese

Smoked sturgeon bites - Mirabel lettuce, sheep cheese spread - radishes and cucumbers

Endive vinaigrette - white ham - mashed white beans with roasted garlic

Stuffed cappelletti, green sauce and peas

Gourmet quail, poultry and mushrooms stuffing - braised beans, foie gras

Maple pie

1st service
Preheat the oven to 400F and bring a pot of water to a boil.
Place the brioche on the center rack of the oven. Let the brioche cook for 10 minutes. Keep the oven on for a future service.
Place the soup garnish in 2 bowls. Pour the cold soup over the filling. Enjoy the soup with the brioche on the side.

2nd service
For the perfect bite, peel the lettuce, garnish generously with the ewe spread, top with a slice of smoked sturgeon and enjoy!

3rd service
Submerge the bag of pasta in the boiling water for 5 minutes. Take out and cut the bag, then pour into a serving bowl.
Place the bowl of endives on the table. On your plate, slice the endives and enjoy with the whole dish.

4th service
Remove the cover from the quail dish, place in the oven already at 400F. Warm up for 15 minutes.

5th service
Cut the pie the portion you desire!

Ingredients

Cold soup: Chicken stock, milk, cream, parsley, celeriac, spinach, thyme, salt and pepper. Sunflower oil, mint, coriander.
Garnish of asparagus, fiddleheads and fermented vegetables: Lebanese cucumber, asparagus, fiddleheads, fermented turnip and cabbage, maple syrup.
Puff pastry brioche with spinach and cheddar cheese: Flour (wheat), water, butter, cheddar, spinach, onions, milk powder, sugar, salt and dry yeast.
Bite of smoked sturgeon - Mirabel lettuce, sheep's cheese toast - Radish and cucumber: Sturgeon, lettuce, cucumber, radish, cream, sheep's milk, cream cheese, chervil, parsley, tarragon, olive oil, honey , salt and pepper.
Endives vinaigrette: Endives, cider vinegar, canola oil, olive oil, maple syrup, water and salt.
White ham - Mashed beans with roasted garlic: Pork, water, white beans, canola oil, garlic, lemon juice and salt.
White sausage cappelletti: Pork, chicken, egg, milk, parsley, milk and pepper. Flour (wheat), eggs, olive oil and salt. Pea pesto: Sauce: Green peas, water, canola oil, parmesan, parsley, garlic, salt and pepper.
Gourmet quail stuffing with poultry and mushrooms: Quail, foie gras, poultry stock, apple cider, beans, celeriac, onions, carrots, chicken, mushrooms, garlic, cream, breadcrumbs (wheat), egg, parsley, lemon , olive oil, thyme, rosemary, salt and pepper.
Maple pie: Maple syrup, maple condensed milk(evaporated milk, liquid sugar, maple syrup, lactose), maple dulce de leche(evaporated milk, liquid sugar, maple syrup, lactose), eggs, flour, butter, salt and dried inactive yeast.
