The winter menu of La Cabane d'à Côté is inspired by the harvests of our land and neighboring producers in the region. It is intended to be simple while maintaining an eye for details so that you can enjoy the moment with your guests. The terroir remains essential and the local cuisine takes on its meaning more than ever.

Apple and maple syrup crumble

 

Ingredients

Potato soup: Poultry stock, potatoes, cream, milk, apple cider, onions, leeks, ham, cabbage, butter, thyme, salt and pepper.

Chili jelly: Peppers, apple cider vinegar, water, sugar, apples, gelatin and apple brandy.

Foie gras parfait: Duck foie gras, poultry liver, cream, butter, eggs, sugar, brandy, salt, nitrite salt and pepper.

Honey cake: Flour, honey, butter, milk, brown sugar, eggs, salt and baking powder.

Écu salad: Écu cheese, squash, apples, cranberries, olive oil, herbs, parmesan, garlic scapes, spinach, walnuts, parmesan, salt and pepper.

Orgetto: Barley, chicken stock, cheddar, butter, carrots, onions, Jerusalem artichokes, garlic, thyme, salt and pepper.

Bourguignon from the PDC farm: Deer, goat, sheep, pork, pork stock, red wine, apple cider, onions, Jerusalem artichokes, carrots, potatoes, mushrooms, thyme, butter, flour, salt and pepper. Bread crumbs, parsley, cheddar, salt, pepper and garlic.

Gribiche sauce: Eggs, Dijon mustard, shallots, pickles, canola oil, lemon juice, apple cider vinegar, parsley, tarragon, salt and pepper.

Smoked salmon: Organic salmon, maple syrup, apple cider, ginger, garlic, black pepper, coriander seeds, chilli flakes, mustard seeds, star anise and salt.

Apple crumble: Apples, maple syrup, flour, butter, brown sugar, oatmeal, sunflower seeds, pumpkin seeds and salt.

Preparation method

Pour the contents of the soup into a pot and bring to a boil. Remove from heat then serve.

Grill the honey cake in a toaster or roast it on each side in a pan with a little butter.

The foie gras parfait is served cold, spread on toasted honey bread garnished with pepper jelly, as well as served with ecu cheese and Christmas garnish.

The smoked salmon is eaten cold with the garnish of gribiche sauce.

Put a saucepan containing 7L of water to a boil. Place the bag of orgetto and the bourguignon stew in boiling water. Reduce heat to medium / low. Cook for 10 minutes. Remove the bags from the water using tongs. Open the bags by cutting off a corner, then serve in large presentation plates. Sprinkle the Burgundy stew toppings over the dish before serving.

Preheat the oven to 375F. Remove the lid from the apple crumble, place the crumble on the middle rack of the oven and bake for 10 minutes. Enjoy!
