Maple smoked pork shank with glazed root vegetables and puree.
Fresh product. To be savoured within 7 days of receiving your order. The ham and carrots can be frozen, but we do not recommend freezing the mashed potatoes.
Maple ham: pork shank, white wine, maple syrup, brown sugar, nitrite salt, pepper and rosemary. Carrots: carrots, butter, pork broth, salt and pepper. Mashed potatoes: potatoes, milk, butter, salt and pepper.
Bring a pan of water to boil. Add the bag of maple ham and reduce the heat to medium. Bake for 45 minutes and remove the bag with tongs. Place the bag of mashed potatoes and carrots in boiling water for 10 minutes. Open the bag containing the ham and pour the contents into a pan. Over medium-high heat, reduce the sauce by constantly covering the ham for 6 minutes. Remove the ham from the heat, leaving the sauce in the pan. Finish the sauce by adding 15ml of maple vinegar and stir the sauce. Remove the bag of mashed potato and carrots from boiling water with tongs. Open the bag of puree by cutting a corner of the bag, then pour it in the center of the plate. Rake with a spatula the remaining mashed potatoes. Open the bag of carrots and place on one side of the mashed potatoes. Place the ham on the mashed potatoes and top with all the sauce. Pepper to taste, then serve.
Procedure for thawing
Place the dish on a large plate and leave it in the refrigerator for 24 hours. Follow the preparation method once thawed.
