Lemon maple pie

  • 2 cups of crumbled Graham cookies
  • ½ cup of sugar
  • ½ cup of melted butter
  • ½ cup of lemon juice
  • 1 can of maple condensed milk
  • 4 egg yolks
  • 1 cup of 35% whipping cream
  • ¼ cup of maple syrup
  • zests of a lemon, cut in julienne


  1. In a bowl, mix the Graham cookies, the sugar and the melted butter.
  2. Press the mix at the bottom of a 9 inch pie plate. Cook in the oven at 350 ̊F for 15 minutes. Refrigerate once cooked.
  3. Whisk the lemon juice, the condensed milk and the egg yolk.
  4. Pour the mix over the cooled pie crust. Cook at 325 ̊F for 20 minutes, until it is firm but jellified. Let cool.
  5. In a third bowl, whisk the cream and the maple syrup until you get a smooth whipped cream.
  6. Garnish the pie with the whipped cream and decorate it with lemon zests.
