Lemon maple pie

Ingredients
- 2 cups of crumbled Graham cookies
- ½ cup of sugar
- ½ cup of melted butter
- ½ cup of lemon juice
- 1 can of maple condensed milk
- 4 egg yolks
- 1 cup of 35% whipping cream
- ¼ cup of maple syrup
- zests of a lemon, cut in julienne
Instructions
- In a bowl, mix the Graham cookies, the sugar and the melted butter.
- Press the mix at the bottom of a 9 inch pie plate. Cook in the oven at 350 ̊F for 15 minutes. Refrigerate once cooked.
- Whisk the lemon juice, the condensed milk and the egg yolk.
- Pour the mix over the cooled pie crust. Cook at 325 ̊F for 20 minutes, until it is firm but jellified. Let cool.
- In a third bowl, whisk the cream and the maple syrup until you get a smooth whipped cream.
- Garnish the pie with the whipped cream and decorate it with lemon zests.
