We go off the beaten track to discover a pearling cider that starts its fermentation with the Frontenac Gris lees of our friends from Pinard et filles. Macerated for a month on peels and seeds, the juice takes on a pleasant orange color, not to mention the tannins. Much more lively and tannic, the juice is then squeezed, fermentation continues in stainless steel vats and passes in amphorae when desired to attenuate the acidity. It presents a slight effervescence which helps support the aromas in the mouth.
