A nod to those birds that steal our harvests of ripe cherry trees. Micro-cuvée in semi-carbonic maceration of cherries for 7 days. Once the juice is pressed, fermentation follows in stainless steel vats and then bottling in natural sparkling wine. Perfect as an aperitif or at the end of a meal to accompany cheeses. Floral, fragrant and saline finish.
