Conservation
Keep refrigerated and consume within 5 days. Do not freeze.
Preparation method
Preheat the oven to 425°F (220°C).
Remove the lids from the dishes, remove the blinis from the bag. Place the cake in the freezer for 5 minutes. Then, carefully remove the acetate plastic and reserve the cake in the refrigerator to keep it fresh.
On the stove
Place the bag of blanquette in a medium saucepan. Cover with water and bring to a boil. Let cook for 5 minutes, then turn off the heat and let the bag sit in the hot water for 20 minutes.
5 minutes before the end of cooking the blanquette, add the bag of foie gras to the hot water. After 20 minutes, remove both bags simultaneously using tongs.
In the oven
Divide the soup into equal parts and divide them between the two serving containers.
Place the lentil containers and the two soup bowls on a baking sheet and bake for 10 minutes. After 10 minutes, remove the sheet from the oven. Add the vol-au-vent and blinis to the sheet, then return to the oven for an additional 5 minutes.
Remove all dishes from the oven once cooking is complete.
Service
Serve the sturgeon rillettes with the marinated onions and blinis.
Add PDC old-fashioned mustard (to taste) to the lentil dish.
Serve the squash salad as is.
Place the vol-au-vent in a deep plate. Remove the lid, pour the blanquette into the hollow of the vol-au-vent, then add the foie gras as a garnish. Replace the lid and pour the foie gras fat into the sauce.
For dessert
Remove the "Tricoté Serré" cake from the freezer just before serving to keep it nice and fresh.
